Honey Pecan Pork Cutlets
Ingredients
1 pound boneless loin roast, sliced into
4 equal pieces, about 3/4-inch thick
1/2 cup melon (cantaloupe or honeydew), pur�ed
2 tablespoons honey
1/4 cup lime juice
2 tablespoons butter
1/8 teaspoon curry powder
3 ounces cream cheese, softened
2 to 4 tablespoons milk
4 (1/2-inch thick) slices cantaloupe or honeydew, peeled

MethodIn small saucepan, combine pur�ed melon, honey, lime juice, butter and curry powder. Stir over medium heat until butter is melted. Remove from heat. Brush chop surfaces with sauce. Beat together cream cheese, milk and some of the sauce until smooth and of desired consistency.
In a covered grill, over indirect heat, grill chops, basting often with sauce and turning once, about 15 to 20 minutes. Transfer to serving platter and keep warm.
Brush melon slices with remaining sauce and grill directly over coals, about 2 minutes on each side.
To serve, place a chop on a slice of melon, garnish with a dollop of cream cheese mixture and dust lightly with nutmeg.

Sausage Cheese Balls
Ingredients
2 pounds sausage
1-1/2 cups all purpose baking/biscuit mix
4 cups shredded sharp cheddar cheese
1/2 cup chopped cooked broccoli
1/2 cup finely chopped onion
1/2 tsp of garlic powder
Method
Preheat oven to 375 degrees. Mix all ingredients together thoroughly. Form into 1-inch balls.
Place on ungreased cookie sheets. Bake for 15 minutes or until golden brown. Sausage cheese balls can be frozen uncooked. Thaw and cook according to directions.

Herbed Chicken Salad
Ingredients
2 cups cooked chicken, cut into bite-size pieces
1/4 cup plain nonfat yogurt
1/4 cup reduced-calorie mayonnaise
2 green onions with tops, thinly sliced
1 small carrot, grated
2 radishes, grated
3 tbsp chopped celery
2 tbsp chopped green pepper
2 tbsp chopped fresh parsley
1 tsp Worcestershire sauce
1 tsp Herb Seasoning
1/4 tsp freshly ground black pepper, or to taste
1 1/2 tbsp tarragon vinegar
Garnish:
Lettuce leaves, rinsed and dried
1 8-ounce can mandarin oranges packed in fruit juice, drained, or 3 small tomatoes, sliced
Method
Combine all salad ingredients except garnish.
Mix well, cover and refrigerate at least 1 hour.
To serve, place a scoop of salad on a lettuce leaf and garnish with orange segments or tomato slices.

Simply Divine Casserole
Ingredients
1 (8 ounce) package medium egg noodles
2 pounds ground beef
1 (15 1/2 ounce) jar Ragu plain spaghetti sauce
1 (8 ounce) can tomato sauce
1 teaspoon Worcestershire sauce
Salt and pepper to taste
1 (12 ounce) container cottage cheese
8 ounces cream cheese
1/2 pint sour cream
3 or 4 green onions, chopped
1/2 cup (1 stick) butter, melted
MethodBoil, drain and rinse noodles. Brown meat well; add Ragu, tomato sauce, Worcestershire sauce, salt and pepper. Let meat cook with sauce for a few minutes.
In medium bowl, mix cottage cheese, cream cheese, sour cream and green onions. Grease 2 (2-quart) casserole dishes. Place 1/4 noodles in each casserole. Pour a little melted butter over noodles. Add 1/2 cheese mixture to each casserole. Add remaining noodles; drizzle with remaining butter and top with meat mixture. Bake at 350 degrees F for 35 to 45 minutes.
Freezes well.

Lemon Vanilla Crepes
IngredientsPreparation – 15 minutes, Cooking time – 15 minutes
1/2 cup all-purpose flour
1/4 cup sugar
2 eggs
1 cup milk
4 tbsp butter, melted
vegetable oil
vanilla sugar or sugar
2 juicy lemons, cut into quarteres
MethodPlace the flour and sugar in a bowl. Crack in the eggs and gradually beat in the milk and butter to make a smooth, thin batter.
Heat about 1/2 tsp of oil in a crepe pan or small frying pan. Swirl in a thin coating of batter and cook until golden, flip over and cook the other side. Fold each pancake into halves or quarters and serve immediately with a sprinkling of sugar and splash of lemon juice.
Fill ‘em Up:
Mix together a 8 oz carton of mascarpone with one tbsp of sifted powdered sugar (maybe a splash of orange or coffee liqueur). Ripple through three tbsp of ready-made chocolate sauce and spoon into warm pancakes before folding.
Place 2 cups frozen berries in a bowl and sprinkle over 2 tbsp of powdered sugar. Allow to thaw for a few hours, then ripple in a 7 oz carton of creme fraiche.

Lemon-Chocolate Cookies
Ingredients
3/4 cup sugar
1 1/2 cups butter or margarine, softened
1 tbsp lemon extract
2 3/4 cups flour
1 1/2 cups finely chopped almonds
13 oz. milk chocolate candy kisses, unwrapped
Powdered sugar
1/2 cup semi-sweet chocolate chips
1 tbsp shortening
Method
In large bowl, combine sugar, butter or margarine and lemon extract; beat until light and fluffy. Lightly spoon flour into measuring cup; level off. Add flour and almonds; beat at low speed until well blended. Cover with plastic wrap; refrigerate at least 1 hour for easier handling.
Heat oven to 375? F. Shape scant 1 tbsp dough around each kiss, covering completely. Roll in hands to form ball; place on ungreased cookie sheets.
Bake at 375? F for 8 to 10 minutes or until cookies are set and bottom edges are light golden brown. Cool 1 minute; remove from cookie sheets. Cool completely.
Lightly sprinkle cooled cookies with powdered sugar. In small saucepan, combine chocolate chips and shortening; stir over low heat until melted and smooth. Drizzle over cooled cookies. Store in tightly covered container.

Pork Tenderloin With an Apricot Ginger Glaze
Ingredients
2 pork tenderloins (about 2 pounds total), trimmed
1/4 cup chili power
1/4 cup garlic powder
2 tbsp sugar
1 tbsp salt
1 tbsp course black pepper
1 1/2 cups apricot preserves
1/2 cup barbecue sauce
1 tsp grated ginger
1/2 tsp garlic powder
1/2 tsp hot sauce
1 tbsp chopped cilantro
Juice of 1 lime
Method
Place the chili powder, garlic powder #1, sugar and salt in a jar; shake to blend. Rub about 1/4 of spice mixture onto pork tenderloins. The remaining spice mixture can be stored for later use. Cover tenderloins and refrigerate for 2 to 24 hours.
Prior to grilling, melt apricot preserves in saucepan over medium heat. Remove pan from the heat and stir in remaining glaze ingredients (barbecue sauce, ginger, garlic powder #2, hot sauce, cilantro and lime juice). Place half of the glaze in a serving bowl and hold for service.
Prepare grill at medium-high heat. Grill pork tenderloins for 15-20 minutes, or until the internal temperature of the pork reaches between 155-160 degrees.
When approximately 4 minutes of cook time remains, brush the pork tenderloins with the apricot glaze remaining in the pan. Cook for 2 minutes, turn the pork tenderloins and brush glaze on other side. Cook for an additional 2 minutes.
Remove pork from the grill and let set for 10 minutes before slicing. Serve with reserved glaze.

Easy Fried Eggplant
Ingredients
2 tablespoons canola oil
1 large eggplant, peeled and sliced
3 eggs, beaten
2 cups dry bread crumbs
Method
Heat oil in a large skillet over medium-high heat. Dip eggplant slices in egg, then in crumbs, and place in hot oil. Fry 2 to 3 minutes on each side, or until golden brown. Drain on paper towels.

Ingredients

1? cups of stock, milk or tomato puree

1 1/3 cups of milk stock or tomato puree
? teaspoonful of salt
1 slice of onion
1/3 cup of chopped chicken
? cup of butter
1 or 2 eggs
Method
To prepare this Rizzoletti Recipe, first blanch the rice in cold water, add the stock (that made from bones and giblets of fowl is good for this purpose) and the salt and let cook until the grains are tender but whole. Cook the slice of onion in the butter, add the flour and salt and let cook until frothy, then add the liquid and let boil. Remove the onion and stir one-third a cup of the chicken into one-third a cup of sauce. Into the rest of the sauce stir about a cup of the rice. The dish is at its best when each kernel of rice is surrounded with sauce. Turn both mixtures on to plates to cool. When cold form the rice into balls, make a depression in each ball and put in a little of the chicken mixture, cover with the rice mixture. Roll the balls in soft, sifted bread crumbs, then cover with beaten egg, and then roll in crumbs. Fry in deep fat.

Danish Rye Bread
Ingredients1 cup warm water

1 cup rye flour

1/2 cup warm water
1 cup rye flour
1 tablespoon white sugar
1 tablespoon kosher salt
1 cup warm water
2 cups rye flour
1 cup sifted all-purpose flour (optional)
Method
In a large bowl, combine 1 cup water, 1 tablespoon yeast, 1 tablespoon sugar, and 1 cup rye flour. Cover batter with a damp cloth, and place in a warm, draft-free spot.
In the evening, mix in 1 teaspoon yeast, 1 teaspoon sugar, 1/2 cup warm water, and 1 cup rye flour. Cover again, and set aside overnight.
In the morning, mix in 1 tablespoon sugar, 1 tablespoon kosher salt, and 1 cup warm water. Gradually mix in 2 cups rye flour and 1 cup of all-purpose flour (if using). When the dough has pulled together, turn it out onto a lightly floured surface and knead for about 5 minutes. Form into a loaf, and place on a baking sheet. Allow to rise for about 40 minutes.
Preheat oven to 375 degrees F (190 degrees C). Bake for about 30 minutes, or until the bottom of the loaf sounds hollow when tapped.
