Fun Fruit Kabobs

Recipe
Fun Fruit Kabobs
Ingredients
* 1 apple
* 1 banana
* 1/3 c. red seedless grapes
* 1/3 c. green seedless grapes
* 2/3 cup pineapple chunks
* 1 cup nonfat yogurt
* 1/4 c. dried coconut, shredded

Utensils:

* knife (You’ll need help from your adult assistant.)
* 2 wooden skewer sticks
* large plate

Method
1. Prepare the fruit by washing the grapes, washing the apples and cutting them into small squares, peeling the bananas and cutting them into chunks, and cutting the pineapple into chunks, if it’s fresh. Put the fruit onto a large plate.
2. Spread coconut onto another large plate.
3. Slide pieces of fruit onto the skewer and design your own kabob by putting as much or as little of whatever fruit you want! Do this until the stick is almost covered from end to end.
4. Hold your kabob at the ends and roll it in the yogurt, so the fruit gets covered. Then roll it in the coconut.
5. Repeat these steps with another skewer.

Cranberry Spritzer

7 oz. diet lemon lime soda
ice cubes

Method
1. Fill glass with ice cubes.
2. Add juice and diet soda.
3. Mix well.

3/4 c. light fruit-flavored yogurt

1 tbsp. sunflower seeds
1/3 c. strawberries

Utensils:

Method
Mix all ingredients in a plastic cup.

Ladybug Snack

Ingredients
1 english muffin
cream cheese
red food coloring
raisins
Method
Color the cream cheese with the red food coloring. Spread the colored cream
cheese onto the muffin half, add black raisin dots and eat the delicious lady bug.

Peanut Butter Muffins

Recipe
Peanut Butter Muffins
Ingredients
* 2 eggs
* 1 c. milk
* 1/4 c. banana (about 1 banana), mashed with a fork
* 1/4 c. peanut butter
* 1/3 c. vegetable oil
* 1/4 c. frozen apple juice concentrate, thawed (left out of the freezer until it’s soft)
* 1/4 c. nonfat dry milk
* 2 1/4 c. flour
* 1 1/2 tsp. baking powder
* 1 tsp. baking soda
* nonstick spray

Utensils:

* oven (You’ll need help from your adult assistant.)
* fork
* small bowl
* large bowl
* mixing spoon
* muffin/cupcake tin
* paper muffin/cupcake liners
* wire rack
* measuring cups and spoons

Method
1. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
2. In a small bowl, break the eggs and use a fork to beat them a little bit.
3. In a large bowl, combine the milk, mashed banana, peanut butter, vegetable oil, apple juice, dry milk, and the eggs from the small bowl. Mix with a mixing spoon until the mixture is creamy.
4. Add the flour, baking powder, and baking soda into the large bowl. Mix again.
5. Line a muffin tine with paper liners or lightly spray with nonstick spray. Spoon in the muffin mix. Fill each muffin cup about 2/3 of the way up.
6. Bake for about 15 minutes.
7. When your muffins are finished baking, remove from muffin tin and cool them on the wire rack. Then it’s time to taste and share!

Boooo Pops

Boooo Pops
Ingredients
2 bananas, cut in half
4 popsicle sticks
3oz. of white chocolate
chocolate chips for the eyes and mouth
plastic wrap and wax paper
Method
Peel the banana and cut it in half. Push a popsicle stick in half way.
Wrap each one in plastic wrap and put it in the freezer for 3 hours or until
it is hard. Take the white chocolate and put it microwave safe bowl
and put it in the microwave. Cook it for about one minute until it is melted.
Make sure to stir it so there are no lumps. Take our your bananas and unwrap
them. Dip the banana into the white chocolate. If you are having trouble you
can use a extra popsicle stick to spread on some of the white chocolate
to cover any bald spots. Lay them on wax paper. Take the chocolate
chips and put them on to make eyes and a mouth. Put them at the
freezer again until you are ready to eat them.

Fabulous French Toast

Fabulous French Toast
Ingredients
* 1 egg
* 1/4 c. milk
* dash of vanilla extract
* 1 tbsp. margarine
* 2 pieces of bread

Utensils:

* medium-size bowl
* mixing spoon
* frying pan
* stove (You’ll need help from your adult assistant.)
* spatula
* serving plate
* measuring cups and spoons

Method
1. Crack the egg into a medium-size bowl and beat well. Then mix in the milk and vanilla extract.
2. Put the margarine in a frying pan. Heat the pan on the stovetop on medium heat. It’s hot enough when the margarine starts to bubble.
3. Dunk each piece of bread in the egg mixture. Make sure the bread is totally covered.
4. Cook the bread in the frying pan on low heat until the underside is light brown (about 5 minutes).
5. Use a spatula to flip the bread over, and cook again for another 5 minutes.
6. Use the spatula to transfer the French toast to a plate.

Asian Steak

Asian Steak
Ingredients
1 1/4 lb. lean flank steak, fat trimmed
5 garlic cloves, minced
2 tbsp. ginger root, chopped
1/3 c. vinegar
2 tbsp. wheat-free soy sauce, light
1/2 c. onions, chopped and divided
3 c. watercress, cleaned and trimmed
1 medium carrot, grated
1/4 c. water
red pepper flakes (optional)

Utensils:

* knife (You’ll need help from your adult assistant.)
* food processor (You’ll need help from your adult assistant.)
* grill (You’ll need help from your adult assistant.)
* measuring spoons
* measuring cups
* oven (You’ll need help from your adult assistant.)
* saucepan
* large bowl

Method
1. Place flank steak in a shallow glass dish.
2. Combine garlic, ginger, vinegar, soy sauce, red pepper (optional), and 1/4 cup onions in a food processor. Blend until smooth.
3. Pour half the marinade over the steak. Turn steak to coat both sides. Cover and refrigerate for at least 30 minutes. Store the remaining marinade in the refrigerator.
4. Grill the steak on each side for 5 to 7 minutes for medium rare.
5. Place remaining marinade into a small saucepan and add 1/4 cup water.
6. Simmer over low heat and cook for 3 to 4 minutes.
7. In a large bowl, toss watercress, remaining onions, and carrots with warm marinade.
8. Slice steak into thin strips and serve steak slices on salad.

Southern-Style Cornbread

Southern-Style Cornbread
Ingredients
* 2 eggs, beaten with a fork
* 1 c. cornmeal
* 1 c. flour
* 1 c. milk
* 2 tsp. baking powder
* 1/4 c. vegetable oil
* 1 tsp. salt
* 1 tbsp. sugar
* 1/2 c. corn (fresh, canned, or frozen if it’s taken out of the freezer ahead of time and soft)

Utensils:

* oven (You’ll need help from your adult assistant.)
* fork
* large bowl
* mixing spoon
* square baking pan (8″ x 8″) coated with nonstick spray
* knife
* measuring cups and spoons

Method
1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
2. Put all the ingredients, except for the corn, into a large bowl.
3. Beat all the ingredients together with a big wooden spoon. The mixture should be smooth.
4. Stir in the corn and mix.
5. Pour the mixture into baking pan coated with nonstick spray.
6. Bake in the oven for 25 or 30 minutes or until the cornbread is light brown on top.
7. Remove bread from the oven, cut it into 9 pieces with a knife, and serve it warm for a lip-smacking treat.

Crunchy Munchy Granola

Crunchy Munchy Granola
Ingredients
* 2 c. oatmeal
* 1/2 c. peanuts
* 1/2 c. wheat germ
* 1/4 c. honey
* 1/4 c. vegetable oil
* 1 tsp. vanilla extract
* 1/2 c. raisins
* 1/2 c. carob chips

Utensils:

* oven (You’ll need help from your adult assistant.)
* large bowl
* small bowl
* mixing spoon
* baking sheet, oiled
* measuring cups and spoons

Method
1. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius).
2. In a large bowl, use a spoon to mix the oatmeal, peanuts, and wheat germ.
3. In a small bowl, mix the honey, oil, and vanilla.
4. Work the honey, oil, and vanilla mixture into the first mixture that’s in the large bowl. Use your hands to make sure it’s all mushed together really well, or you can use a mixing spoon if you like.
5. Spread the mix onto the oiled baking sheet. Bake for 15 minutes, then remove the baking sheet from the oven.
6. Use a mixing spoon to stir the mix around a little on the baking sheet, then add the raisins and carob chips.
7. Put the baking sheet back in the oven, and bake for another 10 minutes.
8. Remove granola from oven and allow it to cool.
